Hope you all had a “sparkling” 4th of July!
Now, we enter the “DOG DAYS OF SUMMER”!!!
With temperatures reaching triple digits, I try to find recipes that are cool and refreshing…..
and being from Texas, we eat A LOT of salsa…….
GREEK SALSA!!
That’s right….I love to make this for gatherings to go along with the traditional salsas!
Greek Salsa
2 T. Balsamic Vinegar
2 T. Olive Oil
3 t. Greek Seasoning
2 Garlic Cloves, minced
1 cup grape (or cherry) tomatoes 1/4rd
1 cucumber peeled and chopped
1/2 cup feta cheese
1/2 cup thinly sliced and chopped red onion
1 can large black olives, chopped
In a small bowl: whisk vinegar, oil, greek seasoning and garlic together….set aside.
In a large bowl: combine cucumber, tomatoes, onion, olives, feta cheese
Pour liquid mixture over vegetables and refrigerate til cold (or if you’re like me, you just start eatin!)
Serve with chips!
This is also delicious over grilled chicken and hamburgers!!!!
Try to stay cool during these “dog days”!!!

Yummmmmy… I love salsa..any type of salsa really I need to make this. I make my own salsa that I at one time sold to make a little extra money. Hope you had a fantastic 4th!!
