I thought it would be fun to share a family favorite recipe with you for a change!
Apricot Preserves/Picante Sauce Chicken
I found this recipe eons ago, in a Cooking Light Magazine, when we lived in Germany with two small kids! I’ve been asked to make it ever since….
……and my babies ain’t babies anymore!!
I’m not a gourmet cook by any means……
Trust Me!!
But, I do have a “stash” of family favorites and “go to” meals that have sustained me all these years!!
I am a ‘quick to get it done’ type of cook.
The fewer ingredients the better in my book!!
This baby has 5 ingredients and is super, duper quick!!!!
Pace Picante Sauce (mild), Smucker’s Apricot Preserves, Taco Seasoning,
Jasmine Rice (or pasta)
and……..
……..chicken (or turkey)!
I generally figure one chicken breast per person and then I add one or two more, depending on the size of the breasts.
Early in the day (although I have done this last-minute and it still turns out fab!), cut up your chicken into bite size cubes and place it in a zip loc bag. Add your taco seasoning!
The original recipe called for one packet of taco seasoning mix but my family likes things a little spicy, so, I add two.
Pop that baggie in the fridge and forget about it til suppa time!
I try to “squish” the baggie every half hour or so to be sure the seasoning is distributed over all the chicken but, again, this recipe is fool-proof so if you forget…
don’t worry about it!
Once you’re ready to prepare supper, pour a little EVOO in a pan…..get it hot…..and add your chicken!
Saute over medium heat til chicken is almost done and add your full jar of picante sauce and full jar of apricot preserves!
Mix together and let simmer, stirring occasionally.
This is when I put my rice on to cook and by the time the rice is done…..so is the chicken! (approx. 20 minutes)
To plate this masterpiece, I usually place the rice on a plate and add a dollop of real butter. Pour the chicken over the top with a little extra sauce to absorb into the rice!
A little spicy, a little sweet and tangy……..
HEAVEN!!
You can serve this with a nice side salad or fresh fruit!
APRICOT PRESERVES/PICANTE SAUCE CHICKEN
1 16 oz. jar Pace Picante Sauce-Mild
1 18 oz. jar Smucker’s Apricot Preserves
1-2 packets of taco seasoning
Chicken (1 breast per person plus 1-2 extra for good measure)
Jasmine Rice or Pasta

I have a recipe that also calls for apricot preserves with chicken and it’s delish! I’m sure this recipe is awesome too! Thanks for sharing Angela. I love learning about new recipes and this one sounds like a keeper.
These sound like my kind of flavors. I just bought some peach/mango salsa at Costco and I’m thinking that would work, too.
